Colour, noise, beauty.
The Sanità quarter is all this and far more. To fully appreciate the “flavour journey” offered by Concettina ai Tre Santi and its utterly unique hospitality, one cannot simply regard the Sanità quarter as a mere setting.
Rione Sanità is an essential component that magnifies the entire experience of being in the pizzeria. Before and after your visit, the neighbourhood captures you with its dynamism, the same vibrant energy that runs through the people and everything else in Concettina ai Tre Santi.
Root’s journey
If you ask Ciro, Antonio, and Anna Oliva, Rione Sanità is home to them. For everyone else, wherever they come from in the world, it becomes home almost immediately.
Once you are at Concettina ai Tre Santi, a quick tour of the Sanità’s most hidden places is an absolute must. Whether you enter the quarter from the folkloric Mercato dei Vergini or from the Ponte della Sanità, with the nearby cloisters of Basilica di Santa Maria alla Sanità and the breath-taking San Gaudioso Catacombs, there are definite “must-sees” for understanding Sanità.
Its glorious past is immortalised by, among others, the imposing Palazzo San Felice, sibling of the better-known Palazzo dello Spagnuolo, by the underground Hellenistic-era Cristallini hypogeum, and the mural-decorated Santa Maria della Maddalena church, painted blue by the neighbourhood youth.
But there are also still-to-be-discovered places, such as the workshop of creative sculptor-jeweller Vincenzo Oste, the Cappella al Vico Canale ai Cristallini, and the chapel of the Tre Santi, deeply beloved by the Oliva family, since it was right here, in the1950s, that Concettina started making her delicious pizzas.
Ingredients
The Olivas grew up absorbing the slow cadences of the Rione Sanità market: its stacks of crates, colour palettes of fruit, the fragrant vegetables, the exuberant gifts of nature, season after season—all this is the common thread of life that Concettina ai Tre Santi offers to its guests at table. Dedication to fine taste does the rest. Just taste and you’ll see!
