The Olivas’ pizzeria openedits doors in 1951.
Just like many women in the quarters of Naples, Concettina deep-fried her pizzas right on the street corner.
Everyone knew her as “the woman near the Tre Santi wall-shrine.” Such were the simple beginnings of the family establishment in Via Arena alla Sanità, today a benchmark highly respected far beyond the boundaries of this colourful, bustling quarter, an area currently undergoing a radical and very promising urban re-structuring launched “from the bottom” by the people themselves.
At the helm of Concettina ai Tre Santi today is Ciro, a go-getting powerhouse of a businessman, with his father Tonino and mother Anna close at his side.
Ciro engineered the revolution that involved the entire range of family’s business activities, right from the character of the dough through to the selection of each single pizza ingredient.

We’re an extended family: at Concettina ai Tre Santi, our professional team in front of the oven, back in the kitchen, and on the floor embody the Oliva style and share it with our guests. Our pizzas, and all our other specialties, are the harmonious result of a team effort where everyone contributes their best. The Concettina ai Tre Santi spirit is made up of lots of hearts and hands, and that’s why it’s cool, light-hearted, and terrifically contagious.
An explosive volcano
Those who know Ciro Oliva know how much heart he puts into his work and how far he’s come.
Born in 1992, he was a typical scugnizzo in Santa Maria Antesaecula, and now he is a proud pizzaiolo in Via Arena dalla Sanità. He grew up literally among the pizzeria tables, first of his grandparents, then of his parents Tonino and Anna.
Today, he’s the nuclear reactor that powers Concettina ai Tre Santi, overseeing every single detail with meticulous attention, from early morning to late at night. Few can match his heart and commitment.
